Ever had leftover grits from breakfast?  Here is a quick, simple way to use those leftovers.
I took completely cold grits and added salt and pepper to taste, grated Parmesan cheese and any other ingredients you might want to include.  Form the grits into a log shape similar to a meatloaf and wrap it in plastic wrap.  I put it back in the refrigerator to chill again for atleast 30 mins or more.
The next step is to cut the log into patties, flour them, then roll them around in egg wash and finally panko breadcrumbs.  Once your oil is hot, fry the patties until golden brown.  I salted the patties right out of the fryer and you could make a simple dip for them or eat them plain like we did.  These were creamy, delicious and crunchy!  Let me know how you like them!
