chicken sandwich

I had a friend over for lunch and she is a pretty adventurous girl but I didn’t want to try anything too crazy on her first trip over so I did something simple that I felt anyone could appreciate.  I got some boneless, skinless chicken thighs and thinned them out a little.
Salt and pepper the chicken and drizzle a little extra virgin olive oil on the chicken.
I like to pan fry my chicken but you could just bake it in the oven as well.
I got some sourdough bread and toasted it up, sauteed onions and mushrooms and put spinach down on one side and Havarti cheese on the other side beneath the warm chicken for better melting.
This was a really great chicken sandwich and my guest loved it!
