5 different days, 5 different ways: eggs edition

Start in a non stick skillet with bacon.
Next slice up some clean mushrooms.

Beat 4 eggs in a bowl with salt and pepper and add a few ounces of cream cheese to the bowl.

Here is some fresh spinach but I am sure frozen would be find in this also.

Add the mush rooms to the bacon and cook til tender.

Add your chopped spinach to your eggs… 

And a handful of whatever kind of shredded cheese you have on hand.  This is mozzarella.

Spread your bacon and mushrooms evenly in the pan (or whatever kind of veggies and meat you decided to use).

Pour in your eggs and make sure that your stove is on medium.  Cook on one side until it is firm under the bottom and a not too runny on top.  You will get a large round plate if your pan is round and flip the frittata using the plate.  There are lots of good tutorials on that on YouTube if you need to see how to flip it.

Once you cook it on the other side for a little while, here is your result.  Cut up some fresh spinach ribbons for garnish and cut it up like a pizza to serve…
